南北に長くのびた自然豊かな日本において、気候や風土の違いにより、各地方ならではの四季折々の海の幸・山の幸などの食材に恵まれ、その新鮮な素材を生かし、食材を味わい深く調理されてきました。また、季節に合わせた器や調度品を取り入れることで、味覚だけでなく視覚でも料理を楽しむ工夫し、お正月などの年中行事に合わせた特別な料理も作り出してきました。このように、自然の恵みに感謝し、大切に受継がれてきたのが、日本の和食文化です。そして、日本の食文化は、古くからある和食だけでなく、海外の食材や料理を日本の食習慣に合うように変化させた料理も作り出してきました。
